BEFORE WE BEGIN

We do not arrive as a supplier.

We arrive because somewhere in this city, we met someone who understands that hospitality is not a transaction. It is a recognition. The moment a guest crosses the threshold, they are no longer wearing the name the world gave them. They are received as the person who arrived.

KHAYBAR has always known this from the kitchen side. Every meal we prepare carries the same truth: we do not feed a body. We feed a being. Someone who was loved before they were named. Someone whose grandmother is still the ocean, even if the world has forgotten to call it by that name.

The Hoxton knows this too. Every guest who walks through your doors is not a customer. They are someone being returned to themselves.

This is why we are not here to sell you coffee. We are here because two institutions that do the same sacred work have finally found each other.

Dear Max,

We are a roastery. We roast everything ourselves — on Johan van Hasseltweg 54, in Amsterdam Noord. We source from traceable origins. We do not buy anonymously. Every lot we use has a name, a region, and a farmer behind it.

We are also a kitchen. For every 9kg of coffee that leaves our roastery, one meal is prepared in Amsterdam. This is not a donation programme. It is the manner we work by — built into the price, not added on top of it.

We offer The Hoxton white-label production: your name on the bag, our craft inside it. Two paths — a consistent Commercial blend for reliable high-volume service, or a Speciality origin chosen by you from six living origins, each with its own character, story, and land. All carry the same manner. All carry the same sentence on the label.

COLOMBIA

Tumbaga, Excelso EA · Sugarcane Decaf / Washed

Balanced sweetness, caramel, mild citrus. Clean and approachable. One of the most versatile origins in the world — for good reason.

ETHIOPIA

Sidamo, Bombe Ayla · Washed G2

Floral and bright, with notes of bergamot and stone fruit. The origin that gave the world specialty coffee. Traceable to the washing station.

KENYA

Embu, Ndunduri AB · Washed

Gentle sweetness, mild acidity, notes of almond and cream. A quiet, dignified cup. From smallholder women farmers in the Cusco highlands.

RWANDA

Baho Coffee, Humure · Washed

Bright and clean, peach and red apple, silky body. Rwanda produces coffees that carry the clarity of the land. Every sip is traceable.

For every 9kg served, 1 meal is prepared.

THE CONDITIONS

Minimum order: 10kg per delivery.

Delivery frequency: minimum once per month.

The label carries the sentence: "For every 9kg served, 1 meal is prepared." This is non-negotiable.

"Roasted by KHAYBAR Roastery, Amsterdam" — present on the bag, small and honest.

Payment terms: 30 days net from invoice date.

Each year, The Hoxton receives a written record of meals attributed to their name.
