THE RENT
Marco asks €1,500 for the ground floor (60m²) plus €250 for utilities — or leaves the structure open to us. For comparison, our current building (ground + first floor, 120m², excl. tax) costs €2,000. We meet in the middle: the first 12 months are counted honestly, not as a taking of his rights, and not beyond our means.
EARLY MORNING, NOT EVENING
Marco is firm on this point, and we agree fully: number 110 is a breakfast operation. The hours belong to the early morning — the first light, the first coffee, the first shakshuka — not an evening venue. This is not a compromise; it is the vision itself.
THE 7-SHAKSHUKA VISION
A genuine breakfast Salon built around the 7-Shakshukas and KHAYBAR coffee — the first commercial Salon of its kind, reflecting the 9:1 Manner. Marco himself is fond of the idea and finds it a natural fit for the space he once ran his own coffee spot in, before the pandemic.
